Coconut Shrimp Curry

Here is a coconut shrimp curry that I made awhile back but forgot to post. It was pretty delicious, but need a little extra something, like some lemongrass I think would have been great.

I started out by peeling a bunch of shrimp and then plopping them into a bowl with coconut milk (made by dissolving coconut powder in water bc I didn't have a can of coconut milk on hand) and tumeric and curry powder.


Then I sliced up a ton of onions and cooked them with some green peppers and tomatoes plus ginger and a little garlic and chili flakes. After that, I fished out the shrimp and threw them in the skillet until they were cooked. Meanwhile, I had some rice noodles soaking and when the shrimp were cooked, I added in the noodles, added in the sauce, and let it all cook until it looked delcious!


And here's the final result!


Toasted coconut is what is sprinkled around the edges. All in all, it was a success, but I think it can be better!

Fried Plantains

When I was home for Easter, Mom gave me two very ripe plantains to make steamed plantains, eaten with butter and sugar. I kind of forgot the process, basically steam them in the microwave but I forgot the timing. So instead I sliced them and fried them in butter! Those are the ones in the middle. But for most of the plantains, I mashed them, added a bunch of sugar, and a little bit of flour to make a batter of sorts. Dollops were dropped into a skillet with butter, and these tasty fritters were the result! Plantains are so delicious; I wish they were more easily available!

And since we are talking about delicious fruit...check out these beauties! The coating is chocolate and and my homemade caramel mixed together, thinned with a bit of milk. They looked good and tasted great but actually the coating was too liquidly and didn't set up as much as it should. Next time I'll leave out the milk and maybe just add a little melted butter instead.

Berry Crumble Cake

Mom asked me about how to make a crumble so I thought this was a good time to post this masterpiece! Berry crumble with a pound cake style cake on the bottom. Man, was it goooood! I combined a variety of recipes and made a bunch of subsitutions since I didn't have all the ingredients on hand. But basically the cake part is flour, an egg, sugar, butter, a little sour cream, some cream cheese, and some vanilla. The crumble part is the the same - except before the sour cream, cream cheese, and egg. I randomly added in the cream cheese because I didn't have quite enough butter. And I was originally just going to make this with strawberries so I did that and then a layer of crumble topping but then realized it looked too empty. So then I added a layer of frozen berries from Trader Joes (blueberries, blackberries, and raspberries) and then more crumble topping.

Gotta add ice cream to really make it sing!

Easter Feast

And this is our Easter feast! Grilled steaks. Twice baked potatoes with freshly roasted garlic, bacon, green onions, sour cream, and cheese. Duck curry. Samosas. Fried shrimp. Cutlets. Butter pecan ice cream with a berry medley. Need I say more??







Stuffed for days afterwards!!

Home Sweet Home

Ok it's been awhile since I've posted. Basically I went home for Easter and stocked up on some amazingly good food, so I haven't really been doing much cooking, just reheating Mom's masterpieces. But I do have a back log of cooking that I did earlier but never posted. So there will be some posts of my own cooking soon. But first, take a look at some of the stuff I ate at home. MMMMMM. Easter feast pictures are coming up next!

Here's a brunch we had on Saturday. In the back are peppadew peppers stuffed with mozzarella and sundried tomatoes. Man they were good!


Then this is a pizza that me, Ruchir, and Anand made. There was a premade crust and we just loaded it up with everything that we could find! This included fresh mozzarella, shredded mozzarella, summer sausage, fried onions, peppadew peppers, sundried tomatoes,jalepenos, and a variety of seasonings.




Yes it was a hit!
